A delicious energy-packed recipe that will make you start the day with the right foot or will recharge you after a good workout. Promised. These delicate loaves made of coconut meat and other incredible superfoods can be enjoyed on their own or enriched with both savoury or sweet ingredients.

We LOVE them with agave syrup and mixed berries but they are equally great with avocado cream or tomato salsa. Try to believe it!

INGREDIENTS

2 cup of gluten-free organic rolled oats

1 and 1/2 cups of organic wholemeal self-raising flour

6 dried organic figs or dates

½ cup of flaxseeds

1 tablespoon of cinnamon

1 teaspoon of baking soda

1 tablespoon of apple cider vinegar

1 tablespoon of agave syrup

1 and ½ cups of coconut cream (see ingredients below)

(Optional) 1 scoop of vegan proteins if you like to have this snack pre or post-workout

COCONUT CREAM

2 slices of organic raw coconut meat (we have used Mighty Bee)

250 ml of organic raw or virgin coconut water(we have used Mighty Bee)

1 cup of organic coconut flour

1 cup of water

TOPPING

Fresh organic mixed berries

Shredded coconut

Mixed seeds sprinkle

Organic coconut or maple syrup

Vegan, Refined Sugar-free

Gluten-free option obtainable by replacing the wholemeal flour with 2 cups of almond meal + 2 tablespoons of lemon juice.

METHOD

STEP 1) Preheat the oven to 250 C. Lightly oil or line some baking paper into 1 or 2 heart-shaped baking tray. Make sure to find the hearts otherwise, they won’t be “Love-Loaves” anymore!

STEP 2) Prepare the coconut cream by placing all the ingredients into a food processor. Blend for 1-2 minutes until you get a smooth and creamy mixture.

STEP 3) Chop the dates or figs and place them in a large bowl with all the other ingredients. Also, add the vegan proteins if you opted for a higher-protein version.

STEP 4) Place the coconut cream in the large bowl and combine all the ingredients together. Add some hot water to obtain a better result.

STEP 5) Spoon the mixture into the prepared loaf trays and bake it for 30-40 minutes.

STEP 6) Let the cakes cool down for about 20-30 minutes before garnishing with other ingredients.

STEP 7) If you would like to try our favourite sweet version, garnish with some fresh mixed berries, coconuts flakes, agave syrup and mixed seeds.
