Whoever said that salads are boring has certainly never tried a serious salad. Being one of our favourite dishes we feel like defending it to the death and we’ll prove how such an underestimated dish can be so flipping delicious and nutritious. Let’s start with this gorgeous summer veggies and fruits mix enriched with linseeds, pumpkin¬†seeds, and an incredible orange tahini dressing. Proteins, healthy fats, vitamins and minerals all concentrated into one plate. So either you are a salad-lover or an annoying sceptical, go and grab a chopping board and start making this marvel. INGREDIENTS

(2 servings)

1 large cucumber

1 large cup of cherry tomatoes

1 orange

1 cup of blueberries

1/2 cup of green olives

1/3 cup of linseeds and pumpkin seeds

1 tablespoon of tahini sauce

1 tablespoon of apple cider vinegar

1 teaspoon of agave syrup

1 teaspoon of olive oil

1/2 teaspoon of Moringa powder (we have used Aduna)

Salt and pepper to taste

METHOD

STEP 1) Spiralize the cucumber into beautiful curls using the Spiralizer. Alternatively, you can julienne or slice it finely. Although if you love salads we strongly recommend to buy that amazing tool (everything will look so much prettier!).

STEP 2) Half the orange and chop one part into cubes, getting read of the white little flakes. Squeeze the other half and leave the juice aside for the dressing.

STEP 3) Half or quarter the cherry tomatoes and mix them in a bowl together with the cucumber curls, blueberries, pitted olives and the orange cubes. Combine all the ingredients then add the seeds.

STEP 4) Prepare the dressing: place 1-2 tablespoons of orange juice into a blender then add tahini sauce, Moringa, olive oil, vinegar and agave syrup. Blend for few seconds until fully combined then add salt and pepper to taste. If the dressing is too thick, add some extra orange juice.

STEP 5) Pour the dressing on top of the salad then mix thoroughly for 1 minute. Plate it nicely (yes, form enhance taste) and get ready to a storm of flavours.

NOTE

To enjoy the highest flavour, leave the salad aside for about 5 minutes before serving. This will allow the ingredients to properly absorb the dressing then explode into your mouth. If you are starving have it immediately, we don’t want you to pass out…it will be delicious anyway!
