Dinner party ideas can be quite challenging when your guests are not vegans. Surprise them with this alternative entree featuring two of our favourite superfoods. A wonderful wrap made of asparagus and coconut meat that incredibly matches a fresh “Mango, Cilantro & Tomato Salad”. Don’t reveal what the white “cheesy-look” ingredient is and watch your guests’ reaction once it’s in their mouth!

INGREDIENTS

Coconut meat (1 slice per wrap)

Fresh asparagus (3 tips per wrap)

Soy sauce to taste

Salt & Pepper to taste

Extra virgin olive oil to taste


METHOD

STEP 1) Preheat the oven at 200° C while leaving the coconut meat to marinate in soy sauce, salt and pepper.

STEP 2) Chop the asparagus into 2/3 pieces and leave them aside.

STEP 3) Heat a tablespoon of olive oil in a small pan for a couple of minutes then gently fry the coconut slices to keep the flavour. Once they turn golden and slightly firmer, take them off the pan and place them on a plate.

STEP 4) Get your hands dirty! Wrap 3 asparagus pieces with one coconut slice and place them on a cooking sheet laid on a baking tray. Lightly oil the sheet to ensure that the coconut meat doesn’t stick. Season with salt, pepper and coriander to taste and put them in the oven.

STEP 5) Bake for 20 minutes until they get a crispy and firm look.
